There’s nothing I love more than a freshly made salad for lunch or dinner during the springtime. There’s just something about the cool, crisp smell of fresh veggies that’s so much more satisfying in the warmer months than when it’s cold and dreary. The salad we’re bringing you today is low in calories but rich in flavor. This one also happens to be super fun to make because it calls for a spiralizer!

The spiralizer everyone in our office can’t get enough of is the Veggetti. Yes, it’s one of those “ As Seen on TV” products, which makes it a little kitschy, but what can we say? It works, and it works really well.

This healthy recipe calls for just a few ingredients that come together to pack a flavorful and gratifying punch, or crunch, rather. Check out our delicious Spiralized Cucumber and Tomato Salad below.

Spiralized Cucumber and Tomato Salad

Ingredients:

  • 1 Long English Cucumber
  • 1/3 cup Cherry tomatoes
  • 1/2 a Lemon
  • kosher salt, to taste
  • fresh black pepper, to taste
  • 1/3 cup of diced or crumbled feta (optional)

Directions:

Use a spiralizer with the straight blade to cut the cucumber into long, ribbon-like strands . Trim the strands into bite size lengths (about 4 inches long) and place them in a large bowl.

Cut your cherry tomatoes into fourths , then dice or crumble the feta into small pieces. Add both the tomatoes and feta into the bowl .

Drizzle your lemon juice, salt and pepper over the ingredients and toss. Serve right away, and enjoy!
