Avocado Toast

All you need for this delicious breakfast — which is chock-full of Vitamin C and Vitamin B-6 — is whole grain bread, a ripe avocado and a bit of seasoning. You could also get fancy and top it with an over-easy egg, some chopped up tomatoes or toasted pine nuts, but let’s not get crazy. These are healthy recipes for busy people who don’t exactly have a ton of time on their hands, after all.

Put it on the counter:

  • 2 pieces of whole grain bread
  • 1 ripe avocado
  • Salt and pepper to taste

Make it: Cut the avocado into two halves. Using a spoon, scoop half of it into a small bowl. Mash the avocado with a fork, adding salt and pepper to taste. Mash harder if you have a case of the Mondays. Put two pieces of whole grain bread in the toaster. Once toasted to your liking, top with your avocado spread and enjoy!

Tip: To keep the other half of the avocado fresh, return the pit to the center, cover with saran wrap, and store in the fridge.
