Love cucumbers? Love cocktails? Allow us to introduce you to your new best friend this summer: Homemade Cucumber Vodka. You won’t believe how easy it is to make — and how delicious it is to drink!

I’m not one of those fancy home mixologists. I keep it simple. In the summer, when I want to take a break from bourbon, I’m content with a little vodka, some pink grapefruit juice, and a bit of salt on the rim. But I’m proud to say my Pink Greyhounds and Salty Dogs have had quite an upgrade lately thanks to my new standby ingredient: homemade cucumber vodka.

Homemade cucumber vodka lends itself to a variety of delicious, refreshing summer cocktails, from cucumber martinis to cucumber mint coolers. Use it in place of plain vodka wherever you think the flavors would get along. My favorite? Homemade cucumber vodka, pink grapefruit juice, and ginger ale.

Homemade Cucumber Vodka Recipe

Homemade cucumber vodka is so easy to whip up we can barely call it a recipe. All you really need are:

  • 1-2 large cucumbers
  • 1 bottle of vodka
  • A sealable glass container

How to make it:

1. Peel, chop, and seed 1-2 large cucumbers, depending on how much you like cucumbers and how big your container is.

2. Place the cucumbers in a sealable glass container. A quart jar works very well.

3. Pour vodka over the cucumbers to fill the container.

4. Seal the container and let steep for a minimum of three days and a maximum of two weeks. A few days will give you a light cucumber taste. A week or longer will produce a much bolder flavor, but after two weeks the infusion may start to taste bitter.

Ta-da! You’ve got yourself a nice batch of cucumber vodka. And that’s not the best part: You can make homemade vodka infusions with nearly anything your heart desires, from apples to pineapples to strawberries. The world is yours, baby. Now call some friends up and put on some sunglasses to serve up some refreshing cucumber cocktails. Could you be any cooler?
