Mushroom and Tomato Pizza Recipe

Serves 4

Ingredients

  • 1 onion
  • 3 ounces mixed mushrooms
  • 1 large ripe tomato
  • few springs fresh thyme
  • 1 tablespoon olive oil
  • salt and freshly ground black pepper
  • 3 ounces crumbly goat cheese

Preparation

1. Peel and chop the onion finely. Wipe, trim and slice the mushrooms. Peel, de-seed, and slice the tomato. Strip the thyme leaves from their stalks and finely chop. Heat the olive oil in a skillet and gently sauté the onion and mushrooms together until the onions are soft. Stir in the chopped thyme, salt, and pepper.

2. Prepare four small pizza bases (recipe below). Divide the mushroom mixture between the bases and top with the tomato slices and crumbled goat cheese. Bake according to the pizza base recipe.

3. A mixture of interesting mushrooms gives new interest and texture to this international favorite. Don’t overcook the mushrooms; remember they’ll be finished in the oven.

Classic Pizza Base

Serves 4 – Vegan

Ingredients

  • 3 cups bread flour
  • 1 teaspoon flour
  • 1 tablespoon sugar
  • 1 package (1/4 ounce) active dry yeast
  • 2 tablespoons olive oil

Preparation

1. Preheat oven to 450°F.

2. Mix the flour, salt, sugar and yeast together in a large bowl. Stir in the oil and 1 cup warm water. Turn the mixture onto a floured worktop and knead for five minutes, until smooth and elastic. Divide the dough into four equal pieces and roll each piece into a 6-inch circle. Put on a lightly oiled baking sheet and leave in a warm place to rise for 15 minutes. Cover the bases with toppings of your choice and bake for 10 minutes.
