Pepperoni Portabella Pizza

Makes 1 serving: 93 calories

Ingredients

  • 1 portabella mushroom, stem chopped and reserved
  • 2 tablespoons canned crushed tomatoes
  • 1/8 teaspoon garlic powder
  • Dash onion powder
  • Dash Italian seasoning
  • 2 tablespoons shredded part-skim mozzarella cheese
  • 2 slices turkey pepperoni, chopped
  • Optional topping: red pepper flakes

You’ll Need:

  • baking sheet
  • nonstick spray
  • small bowl

Prep: 5 minutes
Cook: 20 minutes

1. Preheat oven to 400 degrees. Spray a baking sheet with nonstick spray.
2. Place mushroom cap on the sheet, rounded side down. Bake until slightly tender, about 8 minutes.
3. Meanwhile, in a small bowl, stir seasonings into crushed tomatoes. Add chopped mushroom stem, and mix well.
4. Remove sheet, but leave oven on.
5. Blot away excess moisture from mushroom cap. Evenly top with tomato mixture. Sprinkle with cheese and chopped pepperoni.
6. Bake until mushroom is tender, tomato mixture is hot, and cheese has melted, 8 to 10 minutes.
