If we could have a love affair with any subscription food service, it would be HelloFresh. Literally nothing is better than getting their package in the mail and knowing that you have a week filled with yummy meals to look forward to. This is especially true during the winter, when the lure of takeout is stronger than ever. Luckily, HelloFresh has put together a bunch of my favorite kind of recipe: SOUP. Soup is the perfect and most satisfying way to end a long, cold day, and HelloFresh definitely delivered. 

HelloFesh’s in-house Registered Dietitian Rebecca Lewis says, “Store-bought, canned and restaurant-made soups are often thick, creamy, calorie-laden, and loaded with extra sodium. Cooking at home is the simplest way to take control of what you’re consuming and making sure It’s healthy.” Here’s another one of our favorite HelloFresh soup recipes that you have to try at home:

Curried Freekeh Soup with Sweet Potatoes and Kale

Freekeh Soup with Kale and Sweet Potatoes

Tools: Pot, Strainer

INGREDIENTS

  • 3⁄4 C Freekeh
  • 1 bunch Kale
  • 1 Onion
  • 1 Sweet Potato
  • 1 T Curry Powder
  • 1 can Chickpeas
  • 2 tbsp Vegetable Stock Concentrate
  • 1 t Chili Flakes
  • 1 T Olive Oil*

DIRECTIONS

  1.  Finely chop the onion. Peel and cut the sweet potato into 1⁄2­inch cubes. Cut the stems off the kale leaves and discard. Cut the leaves into thin strips by rolling the leaves up into a cigar and finely slicing. Drain and rinse the chickpeas.
  2.  Heat a large pot over medium­high heat. Add a tablespoon of oil and add the sweet potato and onion. Season with 1⁄2 teaspoon salt and pepper, to taste. Cook, stirring occasionally for about 5 minutes, until the onions are soft and translucent.
  3.  Once the onions are soft, add the curry powder and as many chili flakes as you dare (we used 1⁄4 teaspoon!). Cook, stirring, for a minute until the curry is fragrant.
  4.  Add the freekeh, 5 cups of water, and the stock concentrate and bring to a boil. Once it has boiled, reduce the heat to low. Cover and cook for about 8 minutes.
  5.  After 8 minutes, add the chickpeas and kale. Taste and season with salt and pepper. Cook and cover for another 5 minutes.
  6. Finish: When the soup is ready, serve immediately! Enjoy!
