The fireworks of Independence Day have come and gone, but there’s still plenty of time to savor the flavors of summer. One of our favorite summertime foods is the blueberry because it offers nutritional benefits and a sweet flavor that can satisfy a sweet tooth without sacrificing a healthy lifestyle. In honor of July being National Blueberry Month, we thought we’d share our favorite blueberry recipes for breakfast, lunch and dinner!

Say Goodbye to Morning Blues with Blueberry Oatmeal Cakes

To get the most out of this dish, we suggest making a batch every weekend and enjoying the fruits of your labor during the week. Here’s what you’ll need in order to prepare a week’s worth of delicious starts to your day:

  • Nonstick muffin tin, which features ½ cup cups
  • Three cups of rolled oats
  • A cup of blueberries
  • One and a half cups of 2% milk
  • An egg
  • Two tablespoons of canola oil
  • A teaspoon of vanilla extract
  • A teaspoon of ground cinnamon
  • A teaspoon of baking powder
  • Pinch of salt

Ever hear of the expression it’s worth the wait? That’s definitely the case with these oatmeal cakes. Once you have your ingredients, throw the oats into a large bowl and pour in your milk. You then have about 8-12 hours where the bowl should be covered in the fridge. Once the milk has been absorbed by the oatmeal, set your oven to 375 and spray your cooking tin with cooking spray. It’s then time to mix all of the ingredients, except for the blueberries, in with the oats. Divide your mixture in the cups and throw a tablespoon of blueberries on top. You then let these bake for 25-30 minutes. Once you’ve completed your batch, you can eat the cakes fresh or heat them up later for 10-15 seconds in the microwave for your morning commute.

Lighten Up Your Lunch with a Chicken Blueberry Salad

No one wants a heavy lunch during the summer that’s going to limit productivity and expand your waistline. Put away the fast food and prepare a refreshing and rejuvenating chicken blueberry salad. It’s quick and easy to prepare, here’s what you’ll need:

  • A package of your favorite Italian-blend salad greens
  • Two cups of grilled chicken
  • A cup of blueberries
  • A cup of kiwi
  • A cup of strawberries
  • Two tablespoons of pine nuts for crunch
  • A few tablespoons of goat cheese – another cheese can be substituted based on your tastes
  • Your favorite light dressing – may we suggest raspberry vinaigrette?

Once you have all of your ingredients lined up, you simply mix them in a large bowl. Don’t dress the salad until you’re in the office and you’ll have lunch for next four days ready to go!

Salmon Tacos with Blueberry Salsa

Like a little kick? Try salmon tacos with a blueberry salsa for a dinner that will leave you satisfied, yet craving more. This entire meal only takes about 20 minutes to put together, which is essential during the work week. Let’s take a look at what you’ll need:

  • Corn tortillas, warmed in the oven
  • A pound of salmon bulgogi
  • A cup of blueberries
  • A cup of basil habanero
  • A zucchini sliced thin
  • Low-fat Mexican cheese or queso fresco
  • Sprouts

For this dish, grill your salmon after it is marinated in the Korean bulgogi. Once the salmon is cooked, simply put together your tacos and finish them off with the blueberry habanero salsa. The sweet and spicy work together so well, this may just become your new favorite dish!
