Chocolate Peanut Butter Smoothie Bowl

Prep Time: 5 Minutes +  30 Minutes Soaking Time

Difficulty:  Easy

“This recipe is like a healthy Snickers in a bowl! If you’re not a fan of peanut butter, you can replace with another nut butter of your choice. I like almond butter and cashew butter.”

Ingredients:

3 Medjool dates (pitted)

2 teaspoons 100% natural peanut butter

1¼ oz tinned chickpeas (drained and rinsed)

1 tablespoon raw cacao powder

3½ oz low-fat play yogurt

1 cup low-fat milk

Toppings:

1 oz natural muesli

½ medium banana (peeled and sliced)

1 tablespoon raw cacao nibs

In a heatproof bowl, cover the dates with boiling water and let soak for 30 minutes to soften. Drain.

Place the dates, peanut butter, chickpeas, cacao powder, yogurt, and milk in a high-powered blender and blend until smooth.

To serve, pour the smoothie mixture into a bowl and top with the muesli, banana, and cacao nibs.
