Who doesn’t love dessert? You probably do what I do when I’m planning a meal: Think about dessert first! What’s better than thinking about dessert? Thinking about low-calorie desserts. If you’re going to have a Labor Day cookout, you’ve probably been thinking about everything from snacks to dessert, right?  Well, we’ve got three really easy-to-make ones that you and your group will love.

Tiramisu

Ingredients:
8 oz. block light cream cheese
3/4 cup mascarpone cheese
1/4 cup NECTRESSE™ Natural No Calorie Sweetener
3/4 teaspoon vanilla
1 tablespoon instant espresso powder
1 cup hot water
1/3 cup Coffee‐flavored liqueur *
1, 7oz. pkg. Italian ladyfingers (savoiardi)
1 tablespoon unsweetened cocoa powder
1/8 teaspoon cinnamon

Directions:
Allow cheeses to come to room temperature. Using a hand held mixer, whip cheeses, NECTRESSE™ Natural No Calorie Sweetener and vanilla in a bowl for 2 minutes. Set aside. Dissolve espresso powder in hot water. Stir in liquor. Quickly dip one lady finger cookie in the espresso mixture and place in an 8X8 pan. Repeat with 11 more cookies for a total of 12 cookies for the bottom layer. Spread half of the cream cheese mixture on top. Repeat process with remaining 12 lady finger cookies and cream cheese spread. Sprinkle cocoa powder and cinnamon on top of cream cheese. Refrigerate for at least 2 hours. Can be made up to two days ahead.

Note: A 7oz. package of ladyfingers is equal to 24 cookies.Instant espresso can be replaced with 1 cup of freshly brewed strong coffee.Angel food cake or ladyfinger sponge cookies can be used in place of Italian ladyfinger cookies.

Apple Cranberry Pie

Ingredients:
1/2 cup fresh cranberries
1/2 cup sweetened, dried cranberries
2 tablespoons apple cider or apple juice
2 teaspoons apple pie spice
1 tablespoon fresh lemon juice
1/4 teaspoon salt
36 NECTRESSE™ Natural No Calorie Sweetener, Packets
2 pounds peeled, sliced apples
1 teaspoon vanilla extract
2 tablespoons cornstarch
2 each refrigerated pie dough crusts

Directions:
Preheat oven to 375° F. Combine the first seven ingredients in a medium sized pot. Bring to a simmer and cook for 4-5 minutes. Remove from heat and allow to cool for 5 minutes. Place apples in a large bowl and pour cranberry mixture on top. Add vanilla and cornstarch. Toss apples to mix. Place one pie crust into a 9-inch pie pan. Add filling. Cover the filling with the second pie crust. Crimp the edges using your fingers or a fork. Cut small slits in center of top crust to release steam. Bake at 375°F for 60-70 minutes.

No-Bake Blueberry Custard Cups

Ingredients:
4 Tbsp. light butter
8 graham cracker squares (2″), crushed & divided
2 Tbsp. water
1 Tbsp. cornstarch
2½ tsp. NECTRESSE™ Natural No Calorie Sweetener
¼ tsp. ground cinnamon
1 Tbsp. lemon juice
2 cups fresh blueberries
8 Tbsp. light whipped topping
4 custard cups or small mason jars

Directions:
Microwave light butter in a small glass bowl for 30 seconds to melt. Add ½ of the crushed graham crackers and toss to coat. Divide the crumb mixture evenly across 4 custard cups. Microwave the cups on high for 1 minute or until set. Let cool. In a medium glass bowl, whisk together water, cornstarch, NECTRESSE™ Sweetener, cinnamon and lemon juice. Add blueberries and toss to coat. Microwave the mixture on high for 4.5 minutes (or until mixture thickens), stopping to stir every 90 seconds. Remove from the microwave and let cool. Spoon the blueberry mixture evenly across the 4 custard cups. Cover and chill until ready to serve. Spoon a generous dollop (approx 2 Tbsp.) of light whipped dairy topping onto each blueberry custard immediately before serving. Then sprinkle with the remaining graham cracker crumbs, dispersing the crumbs evenly across the 4 cups. Enjoy.
