Better Breakfast Tostada with Avocado and Eggs



Cooking spray

4 6-inch corn tortillas

1 tablespoon canola oil or 1 tablespoon corn oil

1 medium red bell pepper or 1 medium green pepper

½ cup diced red onion

1 medium tomato (diced)

2 ounces fat-free cream cheese (cut into pieces)

2 large eggs

2 large egg whites

1 medium avocado (halved, pitted, mashed with a fork)

¼ cup chopped, fresh cilantro

2 teaspoons chopped pickled jalapenos (drained)

Honey and Spice Pears



1 cup light cranberry juice cocktail

½-¾ tsp. Ground cinnamon

⅛-¼ tsp. Ground allspice

4 small firm pears (about 6 ounces each), peeled, halved, and cored

2 tbsp. Sweetened, dried cherries or cranberries

1 tbsp. Honey

Ginger-Pumpkin Bisque



½ tbsp canola oil

1 onion (finely chopped)

¾ tbsp minced, fresh ginger root

1 tbsp fresh or jarred minced garlic

½ tsp dried thyme

¼ tsp ground cinnamon

⅛ tsp salt

1 tbsp all-purpose flour

Baked Mozzarella Cheese Bites



For the Easy Marinara Sauce:

1 ½ cups coarse-grain, no-salt-added, no-sodium strained tomatoes or low-sodium jarred crushed tomatoes

2 ½ tsp salt-free Italian seasoning

¼ tsp ground black pepper


For the Baked Mozzarella Bites:

2 ½ tbsp cornstarch

1 ½ cups whole-wheat panko

2 large egg whites

2 tbsp water

¼ tsp freshly ground black pepper
