Hot dogs are a staple of every BBQ and delicious from the grill or the skillet…but let’s face it, if you’re chatting it up at a barbecue, you’re not gonna want to settle for just one. So, we decided to bring you 4 healthy hot dog recipes. Carrot HotDogs (Special thanks to William P. Dankulich – The Chef) Carrot HotDogs (Special thanks to William P. Dankulich – The Chef) Makes 4 carrot dogs 4 medium carrots, scrubbed and trimmed 1 1/2 tsp low sodium soy sauce 1 Tablespoon rice vinegar (unseasoned) 1 Tablespoon toasted sesame oil 1/2 tsp smoked Spanish paprika 1/4 tsp garlic powder 1/4 tsp dried ginger 1/4 tsp black pepper 1/8 tsp ground cumin 1/8 tsp onion powder 4 whole wheat hot dog buns (or 8 Boston or butter lettuce leaves to be super healthful) Mustard/ketchup/minced onion for serving Whisk soy sauce with the next eight ingredients (through onion powder). Coat carrots in soy sauce mixture and place, in a single layer, in a non-stick aluminum foil-lined pan, cradling foil around carrots so seasoning mixture is in contact with them. Roast at 350 F for 45-60 minutes, rotating carrots every 15 minutes, until browned and seasoning adheres to carrots. Serve immediately on buns (or two cradled lettuce leaves per carrot), scraping any seasoning left in pan on top, with accoutrements on the side. Banh Mi Dog Add a Vietnamese twist with spicy mayo, sliced cucumber, shredded carrot, and fresh mint leaves.
