Fall is officially here: the leaves are falling, the temperatures are dropping, and pumpkin spice is everywhere. As much as love all things pumpkin, there are so many delicious fall foods: squash, sweet potatoes, cranberries… we could go on and on. That’s why we’ve rounded up 5 of our favorite fall meals– they’re healthy, delicious, and perfect for the season. (And don’t worry – there is a pumpkin recipe!)

 

Autumn Arugula Salad with Caramelized Squash & Pomegranate Ginger Vinaigrette from How Sweet Eats

Ingredients:

2 tablespoons coconut oil

1 acorn squash, sliced in ½ inch thick rounds and seeds removed

¼ teaspoon salt

¼ teaspoon pepper

2 teaspoons brown sugar

½ cup whole pecans, chopped

¼ teaspoon pumpkin pie spice

6 cups baby arugula

1 avocado, sliced

1 pomegranate, arils removed

1 seedless cucumber, sliced

⅓ cup pomegranate juice

¼ cup apple cider vinegar

½ teaspoon freshly grated ginger

1 garlic clove, freshly grated

¼ teaspoon salt

¼ teaspoon pepper

Sweet Potato and Sausage Quinoa Bake from Spinach for Breakfast

Ingredients:

 

1 cup of quinoa, dry

2 cups of water

3 small sweet potatoes, peeled and chopped

1 bunch of kale, stems removed and chopped

Package of organic Italian chicken sausage, sliced

Sea salt and pepper

Extra Virgin Olive Oil

⅓ cup (or more to preference) of shredded gruyere cheese

Butternut Squash Chili from Savory Tooth

Ingredients:


2 pounds butternut squash, peeled and diced into ½ inch chunks

28 ounce can diced tomatoes

15 ounce can black beans, drained

15 ounce can pinto beans, drained

1.5 cups vegetable broth, plus 2 tablespoons for sauteing

1 cup cooked quinoa

2 chipotle peppers in adobo, chopped

5 garlic cloves, minced

1.5 teaspoons paprika

½ teaspoon cinnamon

¼ teaspoon salt

¼ teaspoon pepper

Mushroom Lentil Loaf from Pumpkin and Peanut Butter

Ingredients:

 

2 cups green lentils, cooked

2 tablespoons oil

½ medium yellow onion, diced

½ cup carrots, diced

½ cup celery, diced

8 oz button mushrooms, sliced

2 heaping tbsp tomato paste

2 tbsp soy sauce

1 tbsp Worcestershire sauce

1 ¼ tsp thyme

1 cup of old fashioned oats, divided

½ cup almond meal

½ cup organic ketchup

1 tbsp coconut sugar

1 tsp whole grain dijon mustard

1 tsp apple cider vinegar

Pumpkin Risotto with Goat Cheese & Dried Cranberries from Platings and Pairings

1 cup canned pumpkin puree

2 tablespoons unsalted butter

1 shallot, minced

1 teaspoon kosher salt

½ cup grated Parmesan cheese

¼ cup chopped fresh flat-leaf parsley
